What you need

tsp black pepper

tsp salt

fl oz extra-virgin olive oil

oz pasta

lb onion
Instructions
1. Slice the onions in thin slices. The thinner the faster they cook. 2. Heat up the olive oil and add the onions. Add a pinch of salt (to help them release water), mix at high until the onions are translucent then cover with lid and simmer at minimum. 3. Let it cook as long as you can, the more the better. Come every now and then to give a little stir and add some water just if needed. Sometimes the water from the onions is enough, sometimes is not. 4. Cook the pasta 2 minutes under the cooking instructions on the package then dry it into the skillet, add cooking water and mix until the water evaporates. This step is essential to perfectly blend the pasta with the sauce, other the giving some creaminess. 5. Serve and add whatever YOU like. Chives go great, garlic is not a blasphemy… Let your creativity run, cook from scratch with fresh ingredients, that’s what mediterranean diet is about.View original recipe
